Where does NEWTREE source its cacao beans? At NEWTREE, we buy the chocolate, not the beans. The goal of our chocolate supplier is to provide us with a specific taste, resulting in the blend of beans from multiple origins. Therefore the origin can vary slightly from year to year. Is NEWTREE Chocolate Certified Fair Trade? With regards to fair trade, NEWTREE chocolate cannot be certified as fairly traded. Currently there is an insufficient amount of quality certified fairly traded cacao beans in the market to allow us to use fairly trade cacao exclusively. Is NEWTREE Chocolate organic? The majority of cacao trees grow in the shade of the rainforest. In the rainforest, a variety of plants, mammals, and insects provide a complex and natural system of pest management. Thereby eliminating the need for the chemicals used in conventional farming. Most cacao is grown on small, remote family farms. Organic farming is most common as chemicals for conventional farming are too costly, virtually unavailable in the rainforest and cumbersome to apply to cacao trees. Thus, roughly 85% of cacao is organic by default. Organic certification verifies the farming practices but does not ensure the quality of the beans or the fermentation process, two factors which significantly influence flavor. To date, NEWTREE has yet to find sufficient quantities of organic chocolate that meet our organoleptic standards of 73% cocoa with corresponding amount of fat and sugar. Why do all NEWTREE dark chocolates contain 73% cocoa content? There are many reasons we use 73% cocoa content in our dark chocolate bars. Topping the list is exceptional taste. NEWTREE 73% cocoa content exceeds our organoleptic standards by providing the appropriate amount of fat and sugar to be eaten as pure dark chocolate or combined with our other wonderful flavors. Other reasons include: Flavonoids – High cocoa content, specifically high cocoa solids, contain an increased amount of antioxidant components called flavonoids. Flavonoids are from the same family of antioxidants found in other super foods such as tea, red wine, and blueberries. Fiber – Dark chocolate is rich in fiber. Protein – Its protein content is balanced in essential amino acids; Pleasure – Around this percentage of cocoa, you can still consume several pieces of the chocolate without having to drink a water with every bite. What is the shelf life of NEWTREE products? If properly stored, NEWTREE chocolate remains fresh for 2 years. Our regular-bars (80g) are sealed in a foil flow-pack and the mini-bars come packaged in an aluminum foil wrap. How should I store chocolate? Chocolate should be stored in a cool, dry place away from direct heat, light or moisture. It is generally not necessary to refrigerate chocolate. If you do refrigerate chocolate, allow it to return to room temperature 65 – 68 F before consumption. We do not recommend freezing chocolate. Is NEWTREE chocolate good for baking? NEWTREE chocolate are great for baking. Our flavored chocolates add a special touch to your desserts. The flavor will soften slightly during baking but will remain deliciously detectable. Is it true that chocolate is mood enhancing? The very act of consuming sweet, delicious chocolate provides pleasure. For its taste, but also due to its Phenylethylamine (PEA) content, which causes a cascading secretion of “happiness hormones:” serotonin, dopamine and endorphins, which have a positive influence on our well-being and our mood. Chocolate also contains several other substances contributing to our emotional balance: Magnesium – Essential during the formation of nerves, it plays a role in synaptic transmission (communication between neurons). A good magnesium balance contributes to the equilibrium of the central nervous system. Anandamide –This fatty acid derivative belongs to the cannabinoids, which is found in cannabis. But it is present in such insignificant quantities that one would have to eat several dozen kilograms of chocolate to feel any effect whatsoever. How much fiber is in NEWTREE chocolate? Cocoa is rich in fiber. According to various scientific sources, 100g of cocoa powder contains a concentration of 20g to 33g of fiber. Chocolate containing ingredients other than cocoa has a lower fiber content, proportional to the content of cocoa solids. Is NEWTREE chocolate vegan? Yes, New tree dark chocolates are vegan, given that no animal products are used in making the chocolate or in processing/refining the sugar in our chocolate. NEWTREE makes six dark chocolates which do not contain any milk. However, our chocolates are made in a facility that also uses milk, walnuts, hazelnuts and pistachios. All of our bars are manufactured using the same equipment. What does GMO mean? GMO stands for genetically modified organisms. Genetic Modification involves a set of technologies that alter the genetic makeup of such living organisms as animals, plants, or bacteria. Combining genes from different organisms is known as recombinant DNA technology, and the resulting organism is said to be "genetically modified," "genetically engineered," or "transgenic." Soy is a plant that is widely genetically modified. NEWTREE uses less than 1% of soy lecithin as an emulsifier. NEWTREE chocolate gluten free? Concerning gluten, only the REJOICE, FORGIVENESS, RENEW, and BLUSH bars contain gluten. All other NEWTREE bars are gluten free.
Gluten is a combination of proteins found in grains. It lends its elastic properties to breads and other yeast mixtures, providing the ability to stretch and rise. Gluten is a common allergen for people with hypersensitivities to wheat. back-to-top

Does chocolate contain saturated fats? One of the problems of contemporary nutrition is the overly great consumption of fats, and in particular the imbalance between saturated and unsaturated fats, leading to a disproportionate amount of saturated fatty acids in our diet.
Cocoa fat, the sole lipid ingredient of NEWTREE dark chocolates (NEWTREE milk chocolates contain a slight amount of milk fat), is mainly composed of three fatty acids in identical proportions (1/3): • Palmitic acid (C16: 0) • Stearic acid (C18: 0) • Oleic acid (C18: 1) Oleic acid is well known for its positive effects on the cardio-vascular system. It is also used as a lipidic base in the Mediterranean diet, the benefits of which have been proven by scientific research. Among other things, this fatty acid content diminishes LDL cholesterol (“bad” cholesterol) while increasing HDL cholesterol (“good” cholesterol). Stearic acid plays a particular role in saturated fatty acid, since it has no atherogenic or cholesterogenic effect. This is because it is rapidly desaturated in the body and transformed into oleic acid (C18: 0  C18: 1). This means that palmitic acid is the only “true” saturated fatty acid. The balance between unsaturated and saturated fatty acids in cocoa butter is therefore positive (two thirds/one third). As result, the consumption of dark chocolate does not aggravate the imbalance between saturated/unsaturated fats in the contemporary diet. back-to-top
